The ultimate guide to home-made egg pasta

Ingredients:

- 200g of wheat flour (type 00)

- 6 egg yolks

- Egg white (if needed)

Instructions:
Step 1: Prepare the Mixer

Make sure your Kenwood kCook or similar mixer is set up and ready to use. Attach the dough hook or appropriate attachment for mixing pasta dough.

Step 2: Combine Flour and Egg Yolks in the Mixer

Place the 200g of wheat flour (type 00) in the mixer bowl. Pour the 6 egg yolks into the bowl

Step 3: Mix and Knead the Dough

Start the mixer on a low setting, allowing it to gently combine the flour and egg yolks. As you do this, small lumps or "small balls of paste" will form.

Gradually increase the mixer's speed as the dough comes together. If the dough appears too dry and crumbly, add a little egg white gradually until you reach the right consistency.

Continue mixing and kneading in the mixer for about 10-15 minutes, or until you have a smooth and elastic dough. The dough should no longer be sticky and should feel soft and pliable.

With your hands gather the paste and form one single ball.

Step 4: Rest the paste

1. Leave the paste in the mixer bowl and cover it. Allow it to rest in the bowl in the fridge for about 30 minutes. This resting period will help the gluten relax and make the dough easier to work with.

Step 5: Roll and Shape the Pasta

After resting, your pasta dough is ready to be rolled and shaped.

Prepare Your Workspace

Sprinkle a generous amount of all-purpose flour onto your clean working surface. This will prevent the pasta dough from sticking and make the rolling process much easier.

Step 6: Divide the Pasta Dough

Take your fresh pasta dough and divide it into two equal parts. This will make it more manageable and ensure that you roll out each portion evenly.

Step 7: Start with the Widest Setting

Set your pasta machine to the widest setting, usually marked as "0." If you don't have a pasta machine, you can use a rolling pin to achieve similar results; it just requires a bit more effort.

Step 8: Roll the Dough

Take one of the dough portions and flatten it slightly with your hands. Place it through the pasta machine, starting with the wider position. Roll it through the cylinders 4-5 times. This initial rolling will help to knead and smooth the dough, making it more elastic.

Step 9: Adjust the Machine

Gradually adjust the pasta machine to a narrower setting by turning the dial or knob. Roll the dough through the machine once at each setting, reducing the width with each pass. Continue doing this until the dough reaches your desired thickness.

Step 10: Repeat the Process

Repeat the same process with the second portion of dough, starting at the widest setting and gradually reducing the width until it matches the thickness of the first portion.

Step 11: Shaping Options

At this point, you can choose to cut your rolled pasta into various shapes. You can make fettuccine, tagliatelle, pappardelle, or any other shape you prefer. Simply run the rolled pasta sheet through the appropriate cutter attachment on your pasta machine, or use a knife to cut it by hand.

Step 12: Final Flour Dusting

Once you've shaped your pasta, give it a light dusting of flour to prevent the strands from sticking together.
