Gather Your Ingredients:
Steaks: 2 strip steaks, each about 12 oz. (about 340 gr)
Veggies: 1 lb. fresh asparagus. (about 450 gr)
Flavor Enhancers: 1 tablespoon olive oil, 2 tablespoons vegetable oil, 1 tablespoon butter, salt, and black pepper.
Tools You'll Need:
Sous Vide Setup: a water bath container (a deep enough pot will do the trick) and an immersion circulator.
Packing: Ziploc or vacuum seal bags.
For the Sear: Tongs, cast iron pan, or a grill.
Your Sous Vide Steps:
Preparation: Fill the container/pot with water, attach the circulator, and set it to 125°F (51°C) for medium-rare or 130°F (54°C) for medium steaks.
Season & Seal: Season steaks and seal them in your chosen bags, ensuring air is removed.
Asparagus Prep: Place asparagus in another bag, season with salt, add olive oil, and seal.
Cooking Time: Once the water reaches the desired temperature, place the steak bags in the water bath. Cook for 1-2 hours.
Add Veggies: 30 minutes before the steaks are done, add the asparagus bag to the bath.
Sear to Perfection: Heat the cast iron pan with vegetable oil. Remove steaks from bags, pepper them, and sear for 2 minutes each side.
Rest & Serve: Let steaks rest for a few minutes. Plate the asparagus and add the steaks, either whole or sliced.
